Gougére
Gougéres are French cheese puffs that can be enjoyed as an appetizer or by themselves with a side salad. They are made with a basic pate a choux dough with lots of added cheese. The cheese can be anything that tickles your fancy. My mise en place for this recipe included: All purpose flour, whole milk, unsalted butter, eggs, cheese of choice and chives (Optional). For the cheese, I used a blend of gruyére and aged gouda.

Ingredients
- 1 cup Whole Milk
- 100 gm Unsalted Butter
- 1¾ cup A.P. Flour
- 4 Lg Eggs
- 7 oz Shredded Cheese of Choice (I used a mix of Gruyere and Aged Gouda)
- ¼ cup Chopped Chives (optional)
Instructions
- Preheat oven to 400*F.
- Combine butter and milk in a medium saucepan.
- Heat on medium heat until butter melts and the milk is slightly boiling.
- Add flour all at once and start mixing vigorously with a wooden spoon until the dough forms a ball and there is a film at the bottom of the pan.
- Transfer dough to a stand mixer with a paddle attachment.
- Start mixing on low speed and add 1 egg at a time.
- Once last egg is added, mix on medium speed for 5-10 minutes.
- The dough is ready when the paddle is lifted and the dough forms a "V" shape.
- Add the grated cheese and optional chives and give it a final mix to combine.
- Place dough into a pastry bag and cut the tip to ¼".
- Pipe 1.5" diameter circles onto a sheet pan lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
